I don't know about candy in general, but eggs and baby animals are associated with new life, which is symbolic of the religious meaning of Easter.  Candy shaped like eggs, bunnies, chicks, etc. reflects that symbolism.

Happy Easter to those to celebrated it, I'm Orthodox so my Easter is next weekend. :)

I also want to wish any Jewish people who may be here a Happy Passover!

At least Santa Claus is a real person based on Saint Nicolus who gave presents to poor children, unlike a rabbit that hides eggs.

For everyone who wonders what a bunny has to do with Easter, here's the answer I found in the internet.

The hare is a symbol of fertility and birth. In addition, he is a messenger of spring and can usually be found in the forest and meadows during the first warm rays of spring sunshine. Because these two components meet, the hare is a symbol carrier for Easter.
